Spaghetti Squash Casserole
(I OMIT the Cheese and it is still DELISH)

24oz ground turkey or combo of turkey & beef

6 cups Spaghetti Squash, cooked

1 jar Rao’s Tomato Basil sauce

Garlic powder, salt, pepper, crushed red pepper, Italian seasoning

2 egg whites, whisked.

Preheat oven to 400. Cut squash in half long ways and scoop out seeds. Place directly on rack with flesh side up and cook for 20-25 minutes or until flesh is “noodley”. Saute ground turkey and season with seasonings to taste. Add sauce to ground turkey and simmer for 10 minutes. Turn off heat. Combine with cooked spaghetti squash and put in a 9x13 pan sprayed with avocado oil. Stir in eggs.

If desired, top with cheese. I made it with half cheese and half not so my family could enjoy the cheese. I loved it without cheese. Cook at 400 for 30 minutes.

Extra "SURPRISE" Ingredients:

1 medium zucchini - sautéed

1 medium squash - sautéed

1/2 cup black beans

1/2 red bell pepper

1/2 Avocado

Mix all of these ingredients with the spaghetti squash and enjoy!
